Christmas morning. Opening gifts. Enjoying a cuppa. Having someone else make breakfast. Not at my place. I'm still in charge of making a high-protein breakfast that will hopefully smooth out the temper tantrums that will inevitably hit when one sis gets tired of her gifts and wants to play with the other sis' toys. There's a little preparation required to ensure peace on earth and joy to all. I start the night before with my Christmas Morning Breakfast Casserole.
The beauty of this dish is that you prepare it the night before. Also, it doesn't have sausage or any meat as the base, as so many breakfast casseroles have.
In the morning, I pull it from the fridge and throw a diced apple on top before baking, but you could totally skip this step. And I have.
This is essentially French toast, but without all the work.
While baking, I mix up the topping of banana, oats, and butter.
This recipe already maxes out on the sugar I let my kids have, with the raisins on board. But garnished with some (preferably red) fresh fruit and whipped cream, no one misses the syrup.
I'm always glad there is a whole pan, because I always go back for seconds after presents are all unwrapped.
